I had a difficult time using a regular wire stripper due to the stainless steel

Look for Heavy-Duty Cable Cutters with hardened steel blades designed for cutting stainless steel and armored cables. Stainless Steel Shears (Industrial Grade), Dremel Rotary Tool with a Metal Cutting Wheel or Rotary Armored Cable Cutter could also work well dependant on your specific application
